Mayday Hills Flanders Red
The latest entry from our open-fermentation Mayday Hills project is a nod to the traditional, wild-fermented ales of West Flanders, Belgium. Brewed with a variety of specialty Red and Belgian malts, this beer achieves a striking, deep ruby hue and a rich caramel-biscuit malt profile.
We fermented and aged the brew in oak barrels that previously held Botrytis dessert wine. Utilising a traditional four-strain blend of Saccharomyces cerevisiae, Brettanomyces, Lactobacillus and Pediococcus the beer spent months in wood developing its sophisticated profile.
Layered notes of dark fruit, plum, cherry and a balanced tartness with subtle oak tannins sing straight from the hymn-book for those who expect acidity, smoothness and complexity synonymous with the style.
